Negombo blue crabs and lagoon prawns croquettes

Serves 02

Ingredients For the croquettes

75g Lagoon Prawns (cleaned and chopped)
50g Crab meat
50g Red Mullet / Red Snapper (fillet) chopped
1 pc Red Chili chopped
1 clove chopped Garlic
A handful of chopped Coriander leaves
A pinch of Fennel Seed Powder
50g Potatoes – boiled and mashed
50g Bread crumbs
1 Egg
Oil for deep frying
Salt & pepper to taste

Preparation

Mix all the ingredients together
Make round shaped croquettes
Cover croquettes in breadcrumbs
Deep fry until golden brown on medium heat

For the Avo-Mango relish

100g Avocado cut into cubes
100g ripe Mango cubes
20g diced Tomato
5g chopped Onions
A handful of chopped Coriander leaves
A pinch of Cinnamon powder
Olive Oil
Cherry Tomatoes to garnish

Preparation   
Mix all the ingredients together and serve with the garnish.
