Banana Nutella Tart

Banana Mousse


  •  02nos Eggs
  •  200g Sugar
  • 200g Whipping Cream
  • 20g Gelatin Powder
  • 02nos Ripe Banana


Whip eggs with sugar to the ribbon stage, fold in semi whip cream and gelatine. Finely fold in pureed bananas. Set in a mold which suits to the tart base (slightly smaller) refrigerate until use.

Nutella Ganache


  • 100ml Milk
  •  75g Dark Chocolate
  • 75g Nutella


Boil milk remove out from the heat and slowly mix with dark chocolate and Nutella. Leave it to set.

Tart Shell, Colour Sponge


Fill the tart shell with nutella ganache, remove the banana mousse and place on the tart. Slice a banana and brulee it. (Sprinkle sugar on banana and torch it or keep under a very hot oven till sugar caramelizes. Place the brulee banana slice on top and decorate to your choice or as per the picture using colour sponge and piece of chocolate.
